Make batch of Atkins Pancake Mix... use only 1/4 cup of water. The less water you use, the thicker and firmer your crust
will be.
Spoon about 5 TBSP into small aluminum pie plate
Bake in oven at 375f until bottom is fully cooked (golden)
Put oven on broil and let top turn golden brown also if it isn't already.
While the crust is cooking, precook whatever toppings you want to use in the microwave. You could do this in the oven
but I find it easier to precook the toppings.
I use...
1 oz of prepackaged pizza sub meats (already cut up pepperoni, turkey breast, and salami)
3 slices bacon
1/4 cup mushroom pieces
When the crust has finished baking, take it out of the oven and cover with 2 TBSP sundried tomato and basil salad dressing
Top crust with 2 slices of soy mozzarella cheese (use real cheese if you like but this stuff is pretty good with
far less calories and carbs)
Place toppings on top of cheese
Place entire thing back in the oven and place oven on broil until the cheese is melted.

2.
